Pozole...is a traditional pre-Columbian soup or stew made from hominy, with pork (or other meat), chile, and other seasonings and garnish, such as cabbage, lettuce, oregano, cilantro, avocado, radish, lime juice, etc.
The story of pozole is obscure, but some believe that the stew originated with the natives of Tonalá, Jalisco. After the arrival of the conquistadores, Tonalá’s legendary queen Cihualpilli threw a banquet in their honor and pozole was served. After the priests found out the secret behind the recipe (human flesh), a decision was made to change the human flesh for pig's.


I was in Nairobi eating at The Carnivore, a restaurant where they come around with flanks of just about any kind of meat you could imagine and carve it right onto your plate. A flag sits on your table while you compete with other tourists to see who can eat the most. Our flag fell about two hours later, me and an ER nurse from Massachusetts the last standing. I don't remember much else save for a pact I kept with my mother that we would never--ever--tell anyone the things we'd ingested. Like, never, ever, ever.

I ate at the Carnivore in Nairobi... and our flag fell after 3 hours of wildebeest, hartbeest, ostrich, crocodile, giraffe, and god knows what else, but I was so many "dawas" down, it didn't matter...

Never ever ever never??? I didn't go to the Carnivore, but the beef in Masai Mara was something else...
